Monday Meal Time
So how was your weekend? Mine? Great! Saturday, I got to hang out at the library and for Father's day we celebrated with a brunch. But made this too... Some yummy taquitos!

Ingredients:
1 cup cooked shredded chicken
1/2 cups enchilada sauce
1 cup shredded taco blend cheese
6-8 flour tortillas ( fajita size)
1/4 cup plain Greek yogurt
Directions:
There are two ways you can make this dish:
Mix the chicken with enchilada sauce, yogurt and cheese in a bowl. Then spoon about 1/4 cup of mixture onto taco shells and roll tightly.
Or, you can spoon each ingredient separately you like onto taco shell and roll rightly. This is the way I did it, not everyone in my family likes enchilada sauce :)
For both options:
Place rolled taquitos on a greased baking sheet seam side down. Bake in a preheated 425 degree oven for 10-15 minutes or until toasted.
