Hallo! Its a another Monday Meal Time! Today is when I leave on vacation! So excited! But first some Cheesy Ranch and Bacon Potato Salad.

Cook Time 30-35 min
Ingredients
- 2 lbs. new potatoes
- 2 celery stalks, chopped
- about 1/4 of package of dry ranch dressing mix
- 1/4 cup sour cream
- 1/2 cup of mayonnaise
- 1 cup cup of shredded cheddar cheese
- 3-4 slices bacon, cooked and crumbled into pieces
- salt/pepper, to taste preference
Wash potatoes and cut into large pieces. In a large pot, cook potatoes in boiling water until tender. Drain and let them cool. Once cooled, peeled and cut into smaller pieces.
Mix potatoes with remaining ingredients. Keep in a covered container in the fridge until you are ready to eat.
